For Judy...

Judy, as requested, here is my rum ball recipe. It is also easy to double. This is what I normally do as they go quick with family and friends.

Rum Balls

1 cup of chocolate chips
1/4 cup of granulated sugar
3 tablespoons of light corn syrup
1/3 cup of rum (I use 1/2 cup of rum)
2 1/2 cups of finely crushed vanilla wafers
1/2 cup of chopped walnuts or pecans

Melt chocolate in a medium saucepan on low heat stirring constantly. Remove from heat and add the sugar and corn syrup. Stir in the rum. Add the crushed cookies and nuts and mix well.

Let the mixture sit for about 1/2 hour. I have been known to refrigerate it til I can get to it.

Roll into 1 inch balls and then roll in additional granulated sugar (you can also use cocoa, powdered sugar, etc.)

Store in a container. These stay well. I usually keep them refrigerated or if I make lots, I freeze some too and they hold up well.

This recipe makes about 50 depending on the size of ball you roll.

I got this recipe from a Better Home and Garden Magazine way back in 1996. It has never failed me yet. Enjoy!
